Where does the cacao come from?

Mindanao, the southernmost of the major islands in the Philippines, is considered the country’s cocoa capital. With its rich volcanic soils, warm tropical climate, and steady, non-destructive rainfall, the island offers ideal growing conditions for fine-flavour cocoa. Cocoa thrives in the fertile valleys and on the slopes of Mindanao’s volcanoes. The well-drained, nutrient-rich soils are perfectly suited for the sensitive root systems of cacao trees, while the consistently warm temperatures (25–32 °C) and high humidity support healthy growth and even bean development.

Most of the cocoa grown in Mindanao comes from smallholder farmers who manage just a few hectares of land. Cocoa is often cultivated in polyculture systems alongside other crops intended for the local market. Farmers like Antonio, Sean, and Emilio each use their land in different ways – from growing mixed crops to operating small onsite shops. Their cocoa yields are typically too small to justify investing in their own fermentation infrastructure, so they rely on the local cooperative in Calinan for post-harvest processing. This shared fermentary ensures that fermentation and drying are done under controlled conditions – crucial for maintaining consistent quality.

Cocoa from Mindanao is known for its balanced, rounded flavour profile with fruity notes and subtle hints of nuts or caramel. These complex aromas reflect both the vibrant microclimate and the artisanal care involved in its cultivation. Thanks to these natural advantages and a growing focus on quality, Mindanao has become one of Southeast Asia’s most promising origins for fine cocoa.
